Ingredients:

  • 1 onion
  • 1 large firm shiny eggplant
  • 1 clove of garlic
  • 1 tin of tomatoes
  • 2 tablespoons Costa D’oro Pomace olive oil
  • 1 small tub of soured cream
  • Salt, to taste
  • Fresh basil leaves

Directions:

  1. Chop the onion and mince the garlic into a saucepan with a tablespoon of olive oil and let simmer until well-cooked.
  2. Peel and dice the aubergine into 2cm squares and add to the saucepan. Stick the lid on and cook until all of the aubergine is soft.
  3. After about 20 minutes, add the tin of tomatoes to the saucepan and a little seasoning and basil leaves. Let the mixture simmer for 20 minutes and then remove from the heat.
  4. Let the sauce cool for 10 minutes so that when you add the tub of cream, it doesn't curdle.
