Taleggio is a semi-soft cottage cheese named after the Val Taleggio valley in Lombardy in northern Italy. The cheese has a soft and creamy texture with a mild, aromatic flavor. In Sweden, we often put Taleggio on a cheese board and it does really well there, but the cheese has many uses. For example, try topping your gratin with Taleggio or put it on a pizza bianca. The outer shell has a protective function and should not be eaten.
