Suggested recipe: 

Risotto with Pumpkins

Ingredients for 4 portions

  • 300g of Riso Scotti Arborio or Carnaroli
  • 300g of  pumpkin
  • Butter
  • Costa D’oro Pomace Olive oil,
  • A small piece of scalogno (onion)
  • Chicken Meat stock
  • Dry white wine
  • Grana cheese
  • Salt and pepper

 

Directions

Peel the pumpkin and cut it into small pieces.  Wash and dry them.  Finely slice the scalogno and  brown it in oil.  Add the pieces of pumpkin and leave them to absorb the seasoning.  Sprinkle with wine and leave it to evaporate.  Add salt, cover, and leave to stew.  Lightly heat a little oil and butter, add the rice and fry it, stirring gently.  Add the boiling stock and cook as a normal risotto.  Just before removing the rice from the heat, add the pumpkin ragout and stir it all together.  Remove from the heat and add the butter and grated cheese.  Serve with a sprinkling of pepper.
